Roasted Italian-style tomatoes
- 6 YOOM™ tomatoes
- Olive oil
- 4 cloves of garlic
- 1 pinch of salt
- 1 pinch of ground black pepper
- 1/2 teaspoon of fresh or dried oregano
- 1/2 teaspoon of fresh or dried parsley
- 1/2 teaspoon of fresh or dried basil
- 1/2 teaspoon of Provencal herbs

Start by peeling the garlic and chopping it very finely, then put the garlic in a bowl with the oil and let them macerate for around 10 minutes so the oil absorbs the flavour and aroma of the garlic.
Preheat the oven to 180 degrees.
Cut the tomatoes in not very thin slices.
Place greaseproof paper in an oven tray and cover with the tomatoes and then sprinkle the tomatoes with salt, pepper and all the herbs.
Add the oil and garlic so that they cover everything.
Put it into the oven for 15-18 minutes and we’re ready to go!
Now you have got some tomatoes worthy of any Italian restaurant to accompany any number of recipes. It goes well with meat, fish or even as an aperitif served with cheese.
